Dashi is the most common stock in Japanese cuisine. You can use dashi to make miso soup, noodle broth soup, stews, simmered dishes or even takoyaki and okonomiyaki dough.

Fill the pot with water and add bonito flakes, shiitake or other ingredient to make dashi, into the strainer.
Warm in the microwave and refrigerate.
