Izuri Oboro Kombu is a special kind of dried kelp that has been shaved into thin pieces. It is a special kind of kombu that can only be made by highly skilled craftsmen. 

Oboro konbu is carefully shaved by skillfully planing the flat surface of a kombu piece, giving it a distinctive, rippling appearance. As only single pieces of kombu can be shaved at a time, Izuri understands that it is essential to select high-quality, thick pieces of kombu with minimal imperfections. That is why Izuri only uses high grade kombu from Hokkaido for their Oboro kombu. 

Instructions

You can use oboro kombu in any application from soups, stews, stir fries, and more. 

If you want to get creative with oboro kombu, try pickling it or using it as a filling for onigiri rice balls. 

If you're looking for some inspiration, oboro kombu is usually added to miso soup, soup, udon, aemono (Japanese dressed dishes), vinegared dishes, and simmered dishes.
