Amazake is a fermented rice drink made from sake kasu (sake lees) and kome koji (malted rice, or rice koji). Itâs a sweet, rich drink with a flavor slightly reminiscent of Japanese nihonshu. Its texture is normally creamy, thick, and chunky, thanks to the grains of rice that remain inside. Itâs a hearty beverage thatâs great to drink all year round.
Amazake is considered to be one of the most nutritious Japanese drinks because it is rich in B vitamins, dietary fiber, and folic acid. Many call it a âsuper-drinkâ and even a âdrinkable IVâ, as the nutritional benefits from drinking amazake are nearly unmatched.
This additive-free amazake concentrate is made only from organic rice, grown domestically in Hyogo prefecture. The rice koji is carefully made in-house at Adachi by hand with the utmost care, and slowly aged at low temperatures for 48 hours in a special wooden box.
Adachi has been brewing soy sauce, miso, and other fermented seasonings in Japan for over 100 years, and their craftsmen really know what they're doing.

Instructions
Dilute the concentration 2 to 3 times with water or hot water to make authentic amazake at home. Dilute it 2 times and freeze to make a tasty, sweet sorbet. Try adding this amazake concentrate to cake batters for a natural and rich sweetness. Mix through yogurt, or top pancakes with it to add sweetness, nutrition, and the great texture of rice grains.
