Kikurage mushroom is very rich in dietary fiber, calcium, and vitamin D. Other nutrients you can take from kikurage include magnesium, iron, potassium, and phosphorus.
Place the dried kikurage in a bowl filled with water, and let it soak for 15~20 minutes. By using lukewarm water, you can reduce the soaking time by approximately 5 minutes.
If you wish to enjoy the kikuarge with its texture and flavor closer to its raw state, refrigerate the soaking kikurage for 6 hours.
You can reuse the water used for rehydrating kikurage as a soup stock.
You can store the rehydrated kikurage in a freezer for up to a month.
